Natural wine is made only with organic/biodynamic grapes, without adding or subtracting anything in the cellar — no additives, no chemicals, no aromas, no selected yeasts, low sulfur, that’s it. Some prefer the definitions “low-intervention” wine, or “naked” wine, or “raw” wine, or “real” wine, or “live” wine or “natty” wine. We love to call it “PURE FERMENTED JUICE”.
PEOPLE THINK THAT NATURAL WINE IS A NEW THING, BUT IT’S THE TRADITIONAL WAY TO MAKE WINE.

cultivating grapes (not buying);
manual harvest and best selection of the grapes;
spontaneous fermentation(no added yeasts);
daily presence during fermentation (“remontage”, tasting wines etc.);
nothing added to correct wine, playing with physics laws or blending (racks, pumps etc.).

usually harvest is mechanical (crushed grapes, dirty juice; more insects and animals present in the juice);
sulfites adding, selected yeasts adding;

can be added more than 250 enology products to correct wine.
